Islander Style BBQ Chicken (macro-friendly)
How a signature dish embodies flavor, culture, and family.
Nowadays, when I talk about culture, I am usually discussing an organization’s culture or how a leader can aim to improve their workplace culture.
Although I am fascinated with this work and love the idea of creating high-performing organizational cultures, my understanding of culture comes from my background, growing up on the West Pacific island of Guam.
When I think about what a great culture looks like, I am reminded of the family cookouts or barbeques, as we call them in Guam. A great culture is a mix of family, food, and fun.
My earliest memories of growing up in Guam include learning how to bbq. It is a sort of modern-day rite of passage. Learning how to bbq meant was a big deal, as you were now a provider within the family structure.
How to Grill Islander-Style BBQ Chicken
Usually, the first thing we learn how to grill is chicken or the version of chicken preferred by most islanders. This type of marinaded chicken thighs is a staple of the culture, and I can assure you most men growing up in Guam have fond memories of learning to grill the signature dish.
